About Kinomoto Brewery Town
Kinomoto is a historic town inland from Lake Biwa in northern Shiga. For centuries it has served as a regional crossroads, where the movement of people and goods shaped its role in exchange across Japan.

Connected to Lake Biwa’s water system and sustained by pristine mountain water, Kinomoto developed conditions well suited to fermentation. Together with steady seasonal rhythms and its location along historic routes, brewing and food production took root early and continued over generations.
The sake breweries and soy sauce makers in Kinomoto today trace their histories back several hundred years. More than heritage sites, they remain active parts of a living town where fermentation still supports everyday life and community ties.
The Experience
1. Arrival & Brewery Town Walk
Meet your guide at JR Maibara Station and travel together by local train to JR Kinomoto Station. From there, begin a relaxed walk through Kinomoto’s streets, following routes shaped by water, brewing, and the town’s former role as a lodging stop.
The walking route and order of visits may vary depending on timing and local conditions, allowing the tour to move naturally with the town’s daily rhythm.
2. Fermentation, Food, and Local Life
As you walk through Kinomoto, you visit a combination of long-established sake breweries, soy sauce breweries, and other fermentation-related sites that remain in use today. These visits show how fermentation formed the backbone of everyday cooking, local trade, and hospitality in a busy post-town setting.
At Yamaji Shuzo, one of Japan’s oldest sake breweries, guests aged 20 or older can enjoy sake tasting while learning how sake has long been brewed for both local households and travelers passing through the town.
You also visit the fermentation storehouse at Myorakuji Temple, a temple with over 600 years of history, where miso and pickled foods are still made today. Tastings here reveal how temple-based fermentation supported daily meals and strengthened ties between food, belief, and the surrounding community.
Along the way, the walk passes historic shops, symbolic temples, and streets dating back to Kinomoto’s days as a post town, helping you read the town as a whole rather than as a series of isolated stops.
The tour concludes at Kinomoto Station.
